Peanut Butter Banana ‘Nice-Cream’

This is a particularly great recipe for PCOS sufferers as I know that feeling when you want to curl up with ice-cream and watch a movie. But this recipe takes 2 seconds and tastes even better I promise!

Refined sugar free, bananas sustain blood sugar levels, lower blood pressure and are overwhelmingly beneficial to our health. They improve energy levels, are packed with fibre and allow our body to restore electrolytes when we’ve had a bad stomach. They are also said to help you sleep, so eating nice-cream in the evening may aid your sleeping patterns!

The texture of nice-cream is so oddly similar to ice-cream that you probably won’t even notice the difference. The great thing about it is that you can add natural flavours to make any nice-cream you want! In this recipe I have chosen Peanut Butter as I’m pretty much obsessed with it, so any excuse to eat it works with me. But you can play around with adding difference things, such as vanilla, cacao and even frozen berries- so many possibilities!


INGREDIENTS

2 frozen bananas (peeled, cut into slices and frozen over night)

1/4 cup almond milk or coconut milk (add more if needed)

Optional flavours:
1-2 tbsp all natural peanut butter 1 tbsp cacao powder
2 tsp vanilla extract

METHOD

1. Simply blend the bananas in a food processor, gradually adding the milk until desired texture.
2. Add flavouring of your choice and blend again.
3. Serve immediately with a melted coconut oil and almond butter combination or leave to chill in the freezer until serving.
