This jam is without a doubt a million times more delicious than regular store bought jams that are packed with sugar.
It is also so much easier to make than regular jams as you just let the chia seeds do all the work creating an amazing texture. With only 3 ingredients, it is so simple and lasts for up to a week in the fridge!
It goes perfectly with peanut butter or homemade healthy scones. It is such a treat yet so good for you!
Ingredients:
1 cup frozen raspberries
1 tbsp maple syrup
2 tbsp chia seeds
1. In a saucepan, heat the raspberries until they start to ‘melt’. Give them a stir and they should start to all fall apart.
2. Once they start to look like a compote, add the maple syrup and stir through.
3. Add the chia seeds, stirring until they are well combined. Then remove the pan from the heat and leave the mix to set for about 10 minutes to allow the chia seeds to expand.
4. Once cooled and expanded, pour into an air-tight container and keep in the fridge for up to one week. Enjoy!
