Vegan Buckwheat Banana Pancakes

Vegan, fluffy, perfect pancakes- yes please!
This recipe was a very happy accident and now I can’t stop making these. I’ve been trying to come up with the perfect pancake recipe for ages & now I have finally done it! Fool proof pancakes!
They are the fluffiest pancakes I’ve ever made, with no annoying sticking in the pan and easy flipping. Save the recipe for the weekend or if you happen to have an indulgent morning on your hands.

BUCKWHEAT BANANA PANCAKES (makes 10)
– 1 cup plant based milk
– 1tbsp coconut oil
– 1 ripe banana (mashed)
– 1 cup buckwheat flour
– 1 tsp baking soda
– Pinch cinnamon
– Pinch sea salt

METHOD:

1. Mash the banana & mix it in a high speed or hand blender with the milk & coconut oil.
2. Add in the buckwheat flour, baking soda, cinnamon & salt and combine until thick.
3. Heat a little more coconut oil (or oil of choice) in a non stick frying pan on a medium heat. Add 2 tbsp dollops into the pan to form each pancake. Cook each side, waiting until bubbles form before flipping them over. Repeat with the whole mix.
4. Top with whatever the hell ya fancy!
